Vegan Asian Udon Noodles

Here we decided to put a spin on an Asian classic - noodles! Nowadays, noodles can have almost anything in them, but one thing that’s guaranteed is vegetables. So we simply left out the meat and jacked up the veggies along with our secret ingredient! Enjoy!

Prep time: 10 minutes Cooking time: 5 minutes Total time: 15 minutes Servings: 1 person

Ingredients:

  • 1 tbsp olive oil
  • 1 cup sliced onion
  • 1 cup sliced carrots
  • 1 cup sliced pepper (green and red) 2 tsp ground ginger
  • 3 tbsp soy sauce
  • 2 tbsp MAHI Bhut Jolokia sauce
  • 1/4 cup water
  • 300g udon noodles (one packet)
  • 1 sliced spring onion for garnish 1 sprinkle of black pepper

Instructions:

Heat your olive oil in a wok, adding the veggies, ground ginger, 2 tbsp soy sauce and the water. Cook for around 3 minutes on a high heat. Add in our MAHI sauce and cook for a further 2 minutes.

While everything is cooking, boil your udon noodles in a separate pan for around 5 minutes. When ready, drain the noodles and add into your veggie wok.

Stir in the noodles, and add the last of the soy sauce (1 tbsp). Cook for another 2 minutes.

Serve the dish in a bowl and sprinkle some spring onion and black pepper on top for garnish.
